LLOPIS VAPOTRAD® : STEAM PIPES, REFRACTORY MASONRY, DECK OVEN


Llopis, the world renowned inventor of the revolving sole oven, has always built steam-tubed and masonry hearth deck ovens. Until now this range of oven has always been distributed in South Europe; Maison FMF has decided to offer this range of ovens to French Bakers, as well as the ones living in the North of Europe.
As a matter of fact, we have noticed a generalized enlightment of the ovens available on the marketplace, plus a constant cost growing and an ecological concern, that drove us to introduce the Llopis Vapotrad, a range of ovens that is a perfect answer to this new situation.
The secret behind this new offer is quite simple : building an oven that brings quality (baking "à l'ancienne"), performing (capable of cooking large doughs), cost-efficient (brick hearth) and durable, is something that requires an awesome knowledge, quality materials (refractory brick, cast iron,...) and a lot of various materials.
So, these deck ovens are very similar to classic hearth ovens availbale, but with an easier use.

The Llopis Vapotrad is available as a wide range of ovens, all designed to be an adequate answer to every requiring baker who wants :


• high power and high baking capabilities, even with large (and highly hydrated) bunches of doughs;

•energy and cost saving capability, plus a bi-fuelling option;
• the ability to be used in autonomous mode with no need for additional electric power providing;

Based upon the steam tubes technology which has been proved as excellent for decades, the Llopis Vapotrad is built around a refractory brick hearth, and can be fueled by firewood, gas or fuel oil.
Its inherent qualities are a direct consequence of its proven design :

• a refractory brick masonry handmade hearth;
• a wide section of tubes to bring intense and  diffuse heat;
• a superior insulation system all around the oven;
• an important steam production, always available.

Why did you choose these traditional materials like the refractory bricks?
As of today nothing better has yet been proved to be able to replace traditional materials like refractory clay to insulate and store heat. These materials are truly efficient and durable. The most requiring ovens in terms of thermal constraints are built like that. That's the case of glassmaker ovens as well.

So, why some materials like metal or some other -less efficient- have been substituted?

For a couple of reasons :

• the use of these ovens really require a good, traditional know-how, which is quite rare today;
• to face this situation, the whole industry has decided to gather and use its own solutions, less expensive, easier but far less efficient : that's for instance the case of the classic deck oven with annular metal tubes;
• the bad habit of seeing things on a short term, with instant earnings, despite the fact that the exploitation costs are in the end the most important ones on a long term.

That's why we have decided to emphasize the quality increasement, and the control over the exploitation cost.

In terms of Quality : For a good baking, you need to bring a regular and intense heat, available at any moment, and that does not unpredictably fall in temperature. The more the dough is heavy, the more it's hydrated, the more the need for calories will be important; the fresh dough using a huge amount of the latter. In a badly designed oven, you can get a violent loss of heat, with more than 10 minutes required to recover the desired temperature, causing a waste of time and implying a worse baking.
The large section of the tubes and the refractory mass, help the Vapotrad by Llopis to store heat and help the baker avoid these disagreements.

In terms of cost :


of fuel : When compared to other baking techniques, the Llopis Vapotrad is better for retaining produced calories.
So for  a baker who starts baking at 6 o' clock and ending at 9, the remaining heat in the cooking chamber the day after would be about :
• Electric power/ recycling oven : avg 40°C
• Steam tubes, metal oven :  avg 100/120°C
• Llopis Vapotrad : avg 160/170°C
That really proves how much the Vapotrad is better in storing heat, and how much its insulation system is excellent.

The oven loader used with a Vapotrad is very familiar for any baker.
The only settings are the balance between firewood addition and level of burning efficiency.
So the Llopis can bake the huge amount of dough in the morning as the moderate amount baked during the rest of the day.

Firewood is your only source of energy; that means a lot in terms of environmental issues.
Burning firewood casts CO2, but this CO2 is needed by plants and trees to help them grow : that's what one calls a virtuous circle.
In Europe, each cut tree implies to replant another one, as required by our legislation ; so using wood as an energy could be done ad libitum unlike fossil energies (oil, gaz, coal...)
4m3 of firewood = 1ton of oil minus 2.5 tons of CO2.
Nowadays global warming is one of our highest concern, and we think we can greatly contribute to make firewood a good, modern alternative to past century fossil energies.
Built in steel, cast iron, and refractory bricks and stone powder ( no glasswool ) each part of this oven can be recycled.

• Safe :
The only secondary source of energy is electricity for the lighting system.
So the oven can work only with the energy brought by firewood.
Since a llopis is a simple oven, only built with proven materials, it's more reliable yet easy to use than any other one. If you can use a chimney, you can use a Llopis Vapotrad

• Adaptable :

Despite wood energy qualities, one could prefer work with gaz, fuel oil or electricity. The Llopis Vapotrad oven can be adapted to various energies, without altering its performances.

REFRACTORY BRICK MASONRY HEARTH

While metal hearth ovens retain only a few of calories, while classic refractory masonry ovens use refarctory kits, the Llopis Vapotrad is built on refractory bricks.
The traditional bricks, can store heat with their composition and their high density, and are very resistant to fire.
They are stuck with refractory mortar, and so can be easily replaced.
Doors on the façade allow a control and cleaning of this part of the oven.

OVERSIZED TUBULAR SYSTEM

Producing a large volume of calories is a requirement but is not enough when baking. More important is to make this heat quickly available, and in large amount if needed.
If you comapre the oven to a car, the hearth is the engine, the tubes are the gears and transmission.
While all our competitors use only 27mm tubes and 3mm wall thickness, Lllopis made the choice to use 35mm tubes and a 5mm thick wall, 800kg/cm2 resistant for an improved safety and durability.

AN EXCELLENT INSULATING SYSTEM

The lower part of the oven (hearth, inner walls and vault) is entirely made of refractory bricks with a high proportion of alumina.
There is a alveolar insulator under the hearth floor that holds a large volume of air.
Steams are forced to follow a path in the pipes where they cast their calories when meeting the lower part of the tubes.
The vertical insultaion can be made of stone whool or stone powder (depending on the use) in order to optimize the efficiency.
